Wait, so wouldn't this be Roxy, since she ultimately survived the session and lived with the Beta kids in the new universe? I thought that her alias as "Mom" was in the previous pre-scratch iteration of the Beta universe.

No, hiveswap doesn't take place in the new universe. Jude and Joey were actually raised by Jade's very own grandpa and for some reason met Rose's mom.
